The rich territory offers four main types of olives, cultivars, from which the precious product is extracted:

MORAIOLO: Plant with fruits rich in phenolic substances. It produces oil of great character, with strong bitter and spicy notes, appreciated for its fruity flavour.

FRANTOIO: Luxuriant plant with fleshy fruits, rich in aromatic and phenolic substances, from which a fragrant and elegant taste oil is obtained.

LECCINO: Highly productive plant, resistant to low temperatures. An oil with a delicate and noble soul and a round and delicate flavor is extracted from its fruits.

ASCOLANA TENERA: Lush plant with low yields but producing a refined, precious and highly harmonious oil with a high content of polyphenols.
