Description
It is a variety of spring barley with undressed seeds. It is distinguished from the common “pearl barley” for its integral aspect, its taste, its resistance to cooking and its content in soluble fibers. It is also the cereal with the lowest glycemic index and a high content of β-glucans, known in the medical field for its ability to naturally lower cholesterol. It swells a lot during cooking and allows you to prepare very filling soups, therefore it is very suitable for low-calorie diets.
